We colored three-dozen eggs for the kids on Easter weekend and didn’t want to waste them. Do you have any creative ideas for their use this week?
We did homemade Avocado Egg Salad and it is spectacular!
INSTRUCTIONS (& ingredients):
Hard boiled eggs, chopped
Fresh avocado
Mustard (a dab)
Paprika (just a bit)
Green onions, chopped
Salt & pepper (to taste)
Mix all together and enjoy!
