Jill found (quite possibly) the best recipe we’ve seen in months! Love bacon as much as we do? What about asparagus? Chicken too? Let’s put them all together – enjoy!
Ingredients
4 pieces boneless, skinless chicken breasts
12 asparagus spears
1/2 cup pesto sauce
1 tablespoon olive oil
1/2 teaspoon italian seasoning
1/4 cup grated parmesan cheese
4 slices bacon
salt and pepper, to taste
Instructions
Preheat oven to 400 degrees, then line your baking sheet with heavy-duty foil.
Pound out the chicken breasts to approximately a 1/2-inch thickness. Now place chicken and pesto in medium bowl; toss to coat.
Cut asparagus to the approximate size of your chicken roll (so that they will not peep out from the end too much).
Place olive oil &Italian seasoning in a shallow pan or ziplock bag, then toss asparagus until coated well.
Place 3 asparagus spears on your preparation surface, and top with parmesan cheese. Now roll the chicken around the asparagus, then wrapping each roll with a bacon strip (or two to get good coverage, if necessary or desired).
Place the chicken roll in the lined pan, seam side down. Bake, uncovered, at 400 degrees for 35-40 minutes, or until juices run clear.
Last step and important: broil the roll(s) 6 inches from the heat for 3-5 minutes, or until bacon is crisped. Enjoy!
